Butternut Squash Soup

Ingredients

Oil

1 onion, peeled and chopped

1 butternut squash, peeled, deseeded and chopped

1 small potato, peeled and chopped

2 garlic cloves, peeled and crushed

800ml vegetable stock

Salt and pepper

 

Method

Cook the onion over a low heat with some oil for 1-2 mins

Add the butternut squash, potato and garlic and cook for 2 minutes.

Add stock and seasoning, simmer for 25 minutes

Blend and serve
