Gluten Free Scones

Makes 12

1 Baking Sheet Floured

 

Ingredients

500g rice flour

4tsp xanthan gum

10tsp gluten free baking powder

8tbsp icing sugar

100g butter (room temperature)

600ml natural yoghurt

Method

Preheat oven to Temperature 200C/180CFAN/ Gas 7

Mix together the rice flour, xanthan gum, baking powder and sugar in Food Processor

Add in the butter in to the flour

Pour in the yoghurt and bring together into a soft dough

Turn out the dough onto a floured surface and flatten with your hand to 2cm/1” thick

Use a no.70 cutter, push cutter straight down (as opposed to twisting) then lift straight out, gently push remaining dough together, knead very lightly, cut out more scones

Place on a floured baking sheet

Brush the tops of scones with water

Bake in a preheated oven for 20 to 30 minutes

 

To Serve: with Raspberry Jam and Whipped Double Cream
