Meet Cara. Cara is our Bakery Manager Anna’s mini me! Here she is baking at home with Mum Anna making some delicious vegan fudge.
120ml Almond milk
250g Almond or Peanut Butter
1tsp Vanilla Extract
500g Caster Sugar
320g Icing Sugar
Melt butter over medium heat, stir in sugar, treacle, almond milk and bring to the boil. At this stage don’t stir.
Remove from the heat and add nut butter and vanilla extract.
Place icing sugar in a bowl and add the hot mixture. Beat the mixture till smooth.
Pour into a 20cm/8inch square baking tray and leave in the fridge to set firm.
Cut into squares and enjoy!
