Orange & Polenta Cake by Giovanna Eusebi

Makes one large cake


250gm unsalted butter

250gm caster sugar

4 large free range eggs

140gm polenta

200gm plain flour

2 teaspoon baking powder

zest & juice of 2 oranges

1 tsp finely chopped thyme


Cream together butter & sugar

Gradually add beaten egg

Add all dry ingredients followed by orange juice & zest

Put into a greased 28cm tin

Bake at 160C/140CFan/Gas3 for 45 mins

Take out of the oven & leave to cool


100ml orange juice

100gms caster sugar

Boil together orange juice & sugar. Reduce heat & simmer for 5 minutes. Drizzle over cooled cake


Prep: 20 minutes

Cook: 45 minutes
