Vegetable and Bean Chilli

Ingredients

Oil

600g Lentils

8 Onion finely chopped

1 head of celery, finely sliced

A mix of 9 Green, Red & Yellow Peppers finely chopped

2 Courgettes, diced

Mushrooms

1 Bulb of Garlic finely chopped

4 thumb size pieces Ginger

3 tablespoons Cumin

3 tablespoons Paprika

3 tablespoons Chilli powder

3 tablespoons Cayenne Pepper

tin Tomato Puree

1 Large tin Tomatoes

2 pt Vegetable Stock

2 tins Kidney beans, drained

2 tins Sweetcorn, drained

2 tins Butterbeans, drained

2 tins Chickpeas, drained

Method

Put your pot on hob over a medium/high heat, add the oil, when hot cook the garlic, ginger, onion, courgettes, celery and peppers for about 5 minutes until starting to soften

Add the chilli powder, cumin, paprika and cayenne and cook for a minute more.

Stir in the lentils, tomato puree, tomatoes and vegetable stock.

Bring to the boil and cook for 15-20 mins

Add the sweetcorn and beans, and cook for a further 10 minutes
